Where the flavor of time is born: the Casèra of Gerola Alta

At 1,050 meters above sea level, among the wild peaks of the Orobie Alps, lies the Casèra of Gerola Alta, the beating heart of aging.

Here, thousands of forms of Storico rest silently on wooden boards, enveloped by intense aromas and a suspended atmosphere.
During the visit, one witnesses the magic of time refining: cheeses that mature for over ten years, acquiring increasingly complex aromas.

Behind Storico Ribelle lies a project of great value: Valli del Bitto Spa, a company created to protect an ancient knowledge and give voice to the authentic producers of the valley.

A group of about ten cheesemakers carries on traditional practices every day: summer transhumance, hand milking, raw milk processing. Everything is delivered to the Bitto Center of Gerola Alta, which is not just a collection point, but a living place of culture and connection.

• By reservation, you can enjoy traditional dishes based on Storico Ribelle, prepared according to local recipes.

• On the lower floor, the true marvel opens: a monumental cellar that houses over 3,000 forms of maturing cheese, all labeled, turned, and cared for by hand.
